Scones


Whether you want something special for a Mum's morning tea or an easy afternoon tea for the kids when they get home from school, this scone receipe is it!

I knew a lovely elderly lady in Malanda who taught me this receipe - she had a group of us come to her home and then showed us how to make these scones. Not only that, but we all had to then make scones under her instruction, and I am very grateful for her teaching. And yes, you need to "Knead" the scones! 2 cups SR Flour and 1 heaped teaspoon baking powder (not bi-carb) Sifted together in a bowl

In separate bowl beat together: 1 egg, 1 heaped teaspoon icing sugar, 1 teaspoon salt, 1/2 cup of runny cream, 1 tablespoon natural yoghurt and 3/4 cup milk.

Mix liquid and flour together. Place mix onto a lightly floured suface and knead(like bread) till it come together. Add more SR flour if needed. Pat to 1/2-3/4inch thickness to make 12 large scones. Bake on a greased tray in hot oven until cooked.
