Apple, Raspberry and Chocolate Muffins

We had a few small apples left in the fruit bowl, and not wanting to waste them,  my daughter and I came up with the following:

3-5 small apples,  peeled and finely diced
1 cup frozen raspberries
1/2 cup dark chocolate chips
1/2 cup shredded coconut
1 cup GF Self Raising Flour
2 eggs
1/2 cup Rice Malt Syrup (or use honey)
1/2 cup Macadamia oil

Beat syrup, oil, eggs and vanilla together.
Fold in flour and then fold in choc chips, coconut,  apple and raspberries.

Spoon into 12 large muffin cases or 24 small cup cake cases.

Cook 180°C for 15-20mins or until golden and cooked through.

Allow to cool before eating.

Delicious just warm.
